Rice:
2 C water
1 C uncooked basmati rice
1/4 t salt
3 T chopped fresh flat-leaf parsley
4 t roasted salted cashew pieces
Salmon:
1/2 t ground ginger
1/2 t garam masala
1/2 t ground coriander
1/4 t ground turmeric
Dash of kosher salt
Dash of ground red pepper
4 (6 oz) skinless salmon fillets
Cooking spray
1. To prepare rice, bring water to a boil in a small saucepan. Stir in rice and 1/4 t salt; cover, reduce heat, and cook for 20 min or until rice is tender. Remove from heat; stir in parsley and cashews. Keep warm.
2. To prepare salmon, preheat broiler.
3. Combine ginger and the next 5 ingredients (through pepper). Rub spice mixture evenly over the salmon. Place fillets on a broiler pan or baking sheet coated with cooking spray. Cover with foil; broil 7 minutes. Remove foil; broil an additional 4 min or until desired degree of doneness. Serve salmon with rice.

Quinoa with Dried Cherries and Pistachios
from Cooking Light
1 3/4 C uncooked quinoa
2 T plus 2 t extra-virgin olive oil, divided
3 T finely chopped shallots
2 C water
1/3 cup dry white wine
1/2 t salt
3 T fresh lemon juice
1/4 t freshly ground pepper
1/2 cup dried sweet cherries, chopped
1/2 cup dry-roasted pistachios, chopped
1/4 cup chopped fresh mint
1/4 C chopped fresh parsley
1. Rinse and drain quinoa. Heat 2 t oil in a large saucepan over med-high heat. Add shallots to pan; saute 2 minute or until tender. Add 2 C water, wine, and salt to pan; bring to a boil. Add quinoa; cover, reduce heat, and simmer 15 minutes or until liquid is absorbed and quinoa is tender. Remove from heat; set aside, and cool slightly.
2. Combine remaining 2 T olive oil, lemon juice, and pepper in a large bowl. Stir with a whisk. Add quinoa, cherries, and remaining ingredients; toss gently to combine.
Yield: 8 servings.

1 jalapeno pepper, seeded and minced
1/2 t paprika
1/2 t ground cumin
2 cups water, divided
1 1/2 cups fat-free, lower-sodium chicken broth
1 1/2 t chopped fresh thyme
1/2 t freshly ground black pepper
1/4 t salt
1/4 t hot pepper sauce (such as Tabasco)
3 oz andouille sausage, cut into 1/4 in cubes
1 (14.5 oz) can diced tomatoes
1 bay leaf
1 C water
1/2 cup uncooked long-grain rice
1/4 cup thinly sliced green onions
1. Sort and wash black-eyed peas; place in a large bowl. Cover with water to 2 in above peas; soak for 8 hours or overnight. Drain.
2. Heat oil in a Dutch oven over med-high heat. Add onion and next 4 ingredients (through jalapeno) and saute 7 min or until vegetables are tender. Stir in paprika and cumin; saute 1 minute. Add peas, water, and next 8 ingredients (through bay leaf), stirring to combine. Bring to a boil; cover, reduce heat, and simmer 50 minutes or until peas are tender. Discard bay leaf.
3. Combine 1 cup water and rice in a small saucepan; bring to a boil. Cover, reduce heat, and simmer for 12 min or until rice is tender and water is absorbed. Fluff rice with a fork, and stir into pea mixture. Top with green onions.
Yield: 8 servings.

3 T low-sodium soy sauce
2 T dark sesame oil
1 T chile paste (such as sambal oelek)
1/4 tsp salt
6 garlic cloves, finely minced
1 lb ground sirloin
Cooking spray
1. Preheat oven to 400.
2. Combine first 7 ingredients in a bowl. Add beef; mix gently to combine. With moist hands, shape beef mixture into 20 meatballs.
3. Heat a large cast-iron skillet over med-high heat. Add half of the meatballs to pan; cook 4 minutes, turning to brown meatballs on all sides. 2 bacon slices
1 T butter
1 T olive oil
1 cup finely chopped onion
2 garlic cloves, minced
1 1/2 t flour
2 t Dijon mustard
1 cup low-fat milk
3/4 cup shredded sharp cheddar cheese
1/2 t kosher salt
1/4 t freshly ground black pepper
5 C hot cooked rotini
3/4 C frozen green peas, thawed
1. Cook bacon in a large nonstick skillet over med heat until crisp. Remove bacon from pan; crumble. Increase heat to med-high. Add butter and oil to drippings in pan; swirl to coat. Add onion; saute for 5 min, stirring occasionally. Ad garlic; saute for 30 seconds, stirring constantly. Add flour and saute 1 minute, stirring frequently. Stir in mustard. Gradually add 1 C milk, stirring constantly with a whisk, and bring to a boil. Cook for 3 minutes or until slightly thickened. Remove from heat. Let stand 5 min. Add cheese, salt, and pepper, stirring with a whisk until smooth.
2. Place pan over low heat. Stir in bacon, pasta, and peas. Cook for 1 min or until thoroughly heated, tossing to coat.
Yield: 4 servings.

Grandma Driscoll's Potato Salad
Cube potatoes
Chopped onion
Salt and pepper
Sliced hard-boiled eggs on top
(Can also add celery, cubed cucumber, and/or radishes)
Boil potatoes (but don't over-boil them!)
Make dressing in a separate boil:
Mayonnaise
Chili sauce (Russian dressing instead, if you can find it)
Touch of lemon juice
Then mix dressing with potatoes
Mix in a little bit of Thousand Island dressing if there's some left after a couple days.
Farmers' Market Potato Salad
from Cooking Light
1 C fresh corn kernels (about 2 ears)
2 lb fingerling potatoes, cut into 1-inch pieces
2 1/2 T olive oil, divided
2 T chopped fresh tarragon
2 T cider vinegar
2 T whole-grain Dijon mustard
1/2 t hot pepper sauce (such as Tabasco)
3/4 t salt
1/2 t freshly ground black pepper
Cooking spray
3/4 C vertically sliced red onion
3/4 C diced zucchini
1 C cherry tomatoes, halved
1. Preheat oven to 425
2. Place corn and potatoes on a jelly-roll pan. Drizzle vegetables with 1 T oil; toss to coat. Bake at 425 for 30 min or until potatoes are tender. Place mixture in a large bowl. Combine tarragon and next 5 ingredients (through pepper) in a small bowl, stirring with a whisk. Gradually add remaining 1 1/2 T oil, stirring constantly with a whisk. Drizzle potato mixture with dressing; toss gently to coat.

1 t light agave nectar
3/4 t kosher salt, divided
1/2 t freshly ground black pepper, divided
6 (6 oz) boneless, skinless chicken breast halves
Cooking spray
Mint sprigs (optional)
1. Prepare grill to med-high heat.
2. Combine first 10 ingredients; stir in 1/4 t salt and 1/4 t pepper, tossing well to combine.
3. Sprinkle chicken evenly with remaining 1/2 t salt and 1/4 tpepper. Coat chicken with cooking spray. Place chicken on grill rack coated with cooking spray; grill 5 min on each side or until done. Serve with salsa; garnish with mint sprigs if desired.

1 t fresh lemon juice
1 t chopped fresh dill
Lemon wedges

2 T evaporated whole milk
1 T golden cane syrup
Dash of salt
1 T bourbon
1/2 t vanilla extract
3.5 oz bittersweet chocolate, finely chopped
1.75 oz milk chocolate, finely chopped
2 T unsweetened cocoa
1. Combine brown sugar, milk, cane syrup, and salt in a saucepan over med-high heat; bring to a boil. Cook 1 min or until sugar dissolves. Remove from heat. Stir in bourbon and vanilla extract. Add chocolates; let stand 1 min. Stir until smooth. Pour into a shallow dish; cover and chill 4 hours. Heat a tablespoon measure with hot water; pat dry. Scoop chocolate mixture with spoon; dip in cocoa. Roll into balls. Cover and refrigerate until ready to serve.
Yield: 19 truffles.

1 T white wine vinegar

3 T shaved fresh Parmigiano-Reggiano cheese
1/4 t freshly ground black pepper
3/4 cup crubmled feta cheese
1. Bring a large pot of water to a boil with 1 T salt. Add pasta, and cook to directions. Drain.
2. Heat 1 T oil in a large nonstick skillet over medium-high heat. Add onion and oregano; saute 12 min or until lightly browned. Add garlic; saute 2 min. Add tomatoes and vinegar; saute 3 min or until tomatoes begin to soften. Add pasta and spinach; cook 1 min. Remove from heat and stir in cheese, remaining 1 T oil, remaining 1/4 t salt, and pepper. Sprinkle with feta.

1 T chopped fresh cilantro
1 T fresh lime juice
1/8 t salt
Pork chops:
2 t canola oil
1 1/2 t chili powder
1/2 t garlic powder
1/2 tsp salt
1/4 t freshly ground black pepper
4 (4 oz) boneless center-cut pork chops, trimmed
Cooking spray

Preheat oven to 375. Combine 1 T melted butter and 1 minced garlic clove in a small bowl. Brush 1 side of each slice of country sourdough bread with butter mixture. Place bread on a baking sheet; bake at 375 for 8 min or until lightly browned.

Clementine Glaze
from Cooking Light.
Combine 3 cups fresh clementine juice, 1 chopped shallot, and 1 fresh thyme sprig in a heavy saucepan; bring to a boil. Cook until syrupy and reduced to 1/3 cup. Strain mixtrue, and discard the solids. Stir in 2 Tbsp butter and 1/4 tsp salt. Brush the glaze on pork, chicken, or beef while roasting.
Yield: 6 servings.

1/4 cup boiling water

1/3 cup crumbled Gorgonzola cheese (about 1.5 oz)

1 tsp grated orange rind
2/3 cup balsamic vinegar

1. Bring 4 cups water to a boil in a medium saucepan. Gradually add polenta and salt, stirring constantly with a whisk. Reduce heat to low, and cook for 4 min or until thick, stirring frequently. Stir in butter. Spoon polenta into a 9-in square baking pan coated with cooking spray, spreading evenly. Press plastic wrap directly on to surface of polenta; chill for one hour or until polenta is very firm. Cut into 30 squares.
2. Combine 1/4 cup boiling water and currants in a small bowl. Let stand for 10 minutes or until currants are plump; drain. Combine currants, cheese, pine nuts, and orange rind in a small bowl.
3. Heat vinegar in a small saucepan, and cook over medium-low heat until reduced to 2 Tbsp (about 10 min). Cool slightly.

Brown Soda Bread
from Cooking Light
Cooking spray
11.25 oz whole-wheat flour (about 2 1/2 cups)
2.25 oz all-purpose flour (about 1/2 cup)
1/2 cup steel-cut oats (such as McCann's)
2 Tbsp brown sugar
1 Tbsp wheat germ
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 cups low-fat buttermilk
1 large egg, lightly beaten
1. Preheat oven to 325.
2. Coat a 9x5 inch loaf pan with cooking spray. Line the pan with parchment paper, and coat with cooking spray.
3. Weight or lightly spoon flours into dry measuring cups, and level with a knife. Combine flours and next 6 ingredients (through salt). Combine buttermilk and egg; add to flour mixture. Stir just until combined.
4. Spoon the mix into prepared pan. Bake at 325 for 1 hour and 5 min or until a wooden pick inserted in center comes out clean. Invert bread onto a wire rack; cool completely. Remove parchment and slice into 12 slices.
Watermelon Margaritas

2 tsp sugar
1 lime wedge
3 1/2 cups cubed and seeded watermelon
1/2 cup tequila
2 Tbsp sugar
3 Tbsp fresh lime juice

1. Place sugar in a saucer. Robe the rims of 6 glasses with 1 lime wedge; spin rim of each glass in sugar to coat. Set prepared glasses aside.

Grilled Salmon with Citrus-Tomato Salsa

2 medium tomatoes, chopped
2 large navel oranges, peeled, sectioned and coarsely chopped
2/3 cup sliced green onions
4 Tbsp chopped fresh cilantro

1. Combine all ingredients in a large bowl. Season, if desired, with salt and ground black pepper, set aside.

3 oz unsweetened chocolate, finely chopped
4 Tbsp butter
1 cup granulated sugar
2 large eggs

1 cup Guinness Stout
4.5 oz all-purpose flour (about 1 cup)

1. Place one rack in lower third of oven; place another rack in center of oven. Pre-heat overn to 350.
2. To prepare tan brownies, place butter and brown sugar in a medium bowl; beat with a mixer at medium speed until light and fluffy. Beat in 2 eggs and 1 tsp vanilla. Weigh or lightly sppon 4.5 oz (about 1 cup) flour into a dry measuring cup; level with a knife. Combine flour, baking powder, and salt, stirring well. Add flour mixture and pecans to sugar mix, beating just until combined. Spoon into a 13x9 in baking pan coated with cooking spray, spreading evenly with a knife or rubber spatula. Bake at 350 in lower third of oven for 15 minutes.
3. To prepare black brownies, melt chocolate and butter in a large microwave-safe bowl on HIGH for 1 min or until melted, stirring after every 20 seconds until smooth. Add granulated sugar, stirring until well combined. Add eggs, vanilla, Guinness, stirring with a whisk until well combined. Combine flour and salt, stirring well, and add mix to chocolate mix, stirring to combine. Pour mixture evenly over tan brownies.
4. Bake on the center rack at 350 for 25 min or until a wooden pick inserted into center comes out almost clean. Cool in pan on a wire rack; cut into squares. Yield: 32 servings.

Hussar Rounds (Hussaren Krapferl)- Thumbprint Cookies
Mom's Hungarian Hussar Round Christmas Cookies. A Grossman family staple for years.
Ingredients:
Ingredients:
- 1 Cup unsalted butter, softened
- 1/2 cup white granulated sugar
- grated zest of 1 lemon
- 1/2 tsp. vanilla extract
- 3 egg yolks
- 3-3.5 Cups white flour
- 1 egg white
- 3 Tbs. white blanched almonds, chopped
- 2 Tbs. jam, apricot, strawberry, blackberry or raspberry
Garnish
- Powdered sugar
Cooking:
- Preheat oven to 350
- Cream butter and sugar until smooth
- Add lemon zest and vanilla
- Mix in egg yolks
- Mix in flour 1/4 cup at a time, work in until dough is firm but not crumbly
- With hands, roll spoonfuls of dough into 1 inch balls
- Place balls onto an 11x17 greased cookie sheet
- Make small indentation in each ball with thumb, should create small fissures in the sides of the dough
- Beat egg white and lightly brush rim of each cookies with egg white
- Place a dab of jam in each cookie, should fill the thumb print
- Sprinkle each cookie with almonds
- Bake for 20-25 minutes, rotating cookie sheet half way through.
- When cool, garnish with powdered sugar.

Pork Chile Verde

Ingredients

- 4 pounds pork butt or shoulder, trimmed of fat and cut into 2-inch cubes
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- Flour for dredging
- 1/4 cup vegetable oil
- 3 yellow onions
- 1 green bell peppers, cut into 1-inch cubes
- 2 Anaheim chiles, roasted and skin removed, cut into 1-inch cubes
- 2 Poblano chiles, roasted and skin removed, cut into 1-inch cubes
- 2-3 jalapenos, seeds removed, and finely chopped
- 3 garlic cloves, peeled and finely chopped
- 1 1/2 pounds tomatillos, roasted, peeled and chopped
- 1 tablespoon dried oregano
- 2 teaspoons ground cumin
- 2 tablespoons coriander crushed
- 2 bay leaves
- 1 bunch cilantro leaves, cleaned and chopped (about 1.5 cups)
- 4 cups chicken stock
Garnish:
Sour Cream

Directions
(Roasting Tomatillos and peppers can be done while pork is being trimmed and browned)
Husk and rinse tomatillos and place in oven safe roasting pan with Anaheim and Poblano chiles. Roast at 400 degrees for 30 minutes. Turning every 15 minutes. Remove tomatillos when skins have browned but fluid does not leak out too much. Let chiles roast for another 10-15 minutes. Let everything cool before removing pepper skins.
Season the pork meat generously with salt and pepper, lightly flour. Heat oil in a heavy-bottomed skillet over medium high heat and brown pork chunks well in small batches, on all sides. Lift pork out of pan and place in a wide soup pot. Discard fat and place the onions and peppers in the same skillet and sweat over moderate heat, stirring occasionally until limp, about 5 minutes. Add all of the chiles and cook an additional 3-4 minutes, then add the garlic and cook 1-2 minutes more.
Add the Sauteed vegetables, chopped tomatillos, dried herbs and cilantro to the meat, cover with the chicken stock and bring up to a boil and reduce to a slight simmer. Cook for 2-3 hours covered on low or until the pork is fork tender, stir and scrape the bottom of the pot every 30 min to keep bottom from burning.
Adjust the seasoning to taste with salt and pepper. Garnish with Sour cream and serve with red rice or corn tortillas.

Hearty Beet, Mixed Veggie and Quinoa Salad
Serves 10-12
Ingredients:

- 4 medium sized red beets (~3 lbs)
- 4 medium sized golden beets (~3 lbs)
- 1 bunch broccolini
- 3/4 cup white quinoa
- 2 oranges (cara cara, navel work well, one red grapefruit also works well)
- 1 lb. grape tomatoes (mixed color is nice)
- 3/4 cup toasted almonds
- 3/4 cup crumbled mild goat cheese
- 2 Tbs. Olive Oil
- 1/2 tsp. coarsely flaked salt
- 1/2 tsp. ground black pepper
Dressing:
- 4 Tbs. high quality Olive Oil
- 3 Tbs. balsamic or red wine vinegar
- 1 tsp. coarsely flaked salt
- 1 Tbs. lemon juice
Prep:
- Note: beets and quinoa can be done a day before hand.
- Trim, wash and halve beets. Leave skin on for flavor.
- Pre heat oven to 400.
- Coat beets with olive oil, salt and pepper.
- Line a large roasting dish with tin foil, place beets in dish and cover with foil.
- Roast beets until tender in the middle. ~ 60 minutes (test beets with a fork)
- While beets are roasting, boil 1.5 cups of water in a medium sauce pan
- Add 1 Tbs. olive oil and quinoa. Cover and simmer on med. low heat for about 20 min. (stir after 15 min so not to over cook or have the quinoa stick to the pot
- Let quinoa cool to room temp.
- Let beets cool at room temp, then peel and cut into 1-inch cubes
- Cut broccolini into 1 inch lengths. Steam in med. sauce pan for about 4 minutes, until slightly under cooked. Then run under cold water to halt cooking process.
- Peel orange and deseed. Cut into 1-inch cubes.
- Mix dressing
- Mix all ingredients with tomatoes, cheese, almonds and dressing

Homemade Pancake Mix
Serves 3-4 people
Ingredients:
- 1 1/2 cup all-purpose flour
- 1 Tbsp and 1/2 tsp baking powder
- 1 tsp salt
- 1 Tbsp sugar
- 1 1/4 cup milk
- 2 large eggs
- 2 Tbsp butter, melted
Prep:
- Mix dry ingredients then add in wet ingredients until smooth
- Grease a skillet or griddle and bring to medium heat
- Ladle batter in 1/3 - 1/2 cup portions depending on desired size
- Flip when batter starts to bubble
- Keep warm in oven at 200 degrees until all cakes are done.

Spicy Chicken Fried Rice with Peanuts
from Cooking Light
1/4 cup less-sodium soy sauce
1 T dark brown sugar
1 t dark sesame oil
3/4 t crushed red pepper
2 T canola oil
2 cups diced red bell pepper (~2)
1 cup diced onion
1/4 cup thinly sliced green onions, divided
2 T minced peeled fresh ginger
2 large garlic cloves, minced
5 cups cold cooked brown rice
2 cups diced cooked chicken (~1 lb)
1 8 oz can sliced water chestnuts, drained and chopped
1/3 cup chopped unsalted, dry roasted peanuts
1. Combine first 4 ingredients in a small bowl; stir well with a whisk.
2. Heat canola oil in a wok or large nonstick skillet over med-high heat. Add bell pepper, diced onion, and 2 T green onions to pan; stir-fry 3 min or until tender. Add ginger and garlic; stir-fry 1 min. Add rice, chicken, and water chestnuts; stir-fry for 5 min or until thoroughly heated; stirring gently. Add soy sauce mix, cook 2 min, tossing gently to coat. Sprinkle with remaining 2 T green onions and peanuts.

2 oz Parmigiano-Reggiano cheese

1. Cook pasta and drain, reserving 1/4 cup cooking liquid.
2. Heat a large skillet over med-high heat. Add oil to pan; swirl to coat. Add shallots and garlic; saute 45 seconds, stirring constantly. Stir in bell pepper and chickpeas; saute 2 min, stirring occasionally. Add tomatoes; saute 2 min. Stir in pasta and reserved cooking liquid; cook 1 min or until thoroughly heated. Remove from heat. 3/4 t salt, divided
3/4 t freshly ground black pepper, divided
2 T all-purpose flour
1/4 cup olive oil, divided
1/4 cup sliced shallots
1/4 cup dried cranberries
1/4 cup cranberry juice cocktail
6 cups baby spinach leaves
1 ripe red Anjou pear, thinly sliced
1. Combine vinegar, mustard, sugar, 1/2 t garlic, and 1/4 t thyme; set aside.
2. Combine pork and remaining 1 t garlic, remaining 1 tsp thyme, 1/2 t salt, and 1/2 t pepper; toss well to coat. Sprinkle pork mixture with flour; toss well. Let stand 5 min.
3. Heat 1 T oil in a medium saucepan over med heat. Add shallots to saucepan; cook 3 min or until shallots are tender and lightly browned, stirring occasionally. Add cranberries and juice; cook until liquid is reduced to 2 T. Reduce heat to med-low. Add vinegar mix; cook 1 min. Gradually add 1 T oil, remaining 1/4 t salt, and remaining 1/4 t black pepper, stirring well with a whisk. Cover and keep warm.

1-2 T sriracha
1 1/2 T mirin (sweet rice wine)
1 T black bean garlic sauce
2 t sugar
1 cup chicken broth
1 T cornstarch
2 T less-sodium soy sauce
1 t chili oil
1 T canola oil
4 oz ground sirloin
1 T finely chopped garlic
2 t grated peeled fresh ginger
2 cups hot cookd long-grain white rice
8 oz steamed broccolini
1. Squeeze water out of tofu and cut into 1 in cubes.

1 T olive oil
1 T finely chopped shallots
1/4 t crushed red pepper
1/2 cup uncooked quinoa, rinsed and drained
1 T dry white wine
1 cup fat-free, less-sodium chicken broth
1/2 cup baby spinach leaves 1/3 cup chopped seeded tomato (1 small)
1 T shaved fresh Parmesan cheese
1/4 tsp salt
1. Preheat oven to 350
2. Remove papery skin from garlic head and cut in half crosswise, breaking apart to separate whole cloves. Wrap half of head in foil; reserve remaining garlic for other use. Bake at 350 for 1 hour; cool 10 min. Separate cloves; squeeze to extract garlic pulp. Discard skins.
3. Heat oil in a saucepan over medium heat. Add shallots and red pepper to pan; cook 1 min. Add quinoa to pan; cook 2 min, stirring constantly. Add wine; cook until liquid is absorbed, stirring constantly. Add broth; bring to a boil. Cover, reduce heat, and simmer 15 min or until liquid is absorbed. Saute 1/2 t minced garlic in 2 t EVOO for 30 seconds or until fragrant. Stir in 1/3 cup rinsed and drained cannellini beans, 1/8 t salt, and 1/8 t black pepper; mash with a fork. 1 medium onion, cut into 6 wedges
2 Tbsp canola oil
1 tsp brown mustard seeds
3/4 tsp cumin seeds
2 tsp curry powder
4 garlic cloves
1 1/2 in piece fresh ginger, peeled and coarsely chopped
4 cups cauliflower florets (about 1 1/4 pounds)
1/4 cup water
1 tsp salt
1 14.5 oz can diced tomatoes, undrained
4 1/2 cups hot cooked basmati rice
1/4 cup plain fat-free yogurt
1/4 cup chopped fresh cilantro
1. Place tofu on several layers of paper towels. Cover tofu with several more layers of paper towels; top with a cast-iron or other heavy skillet. Let stand 30 min. Discard paper towels. Cut tofu into 1/2-in cubes.
2. Place onion in a food processor; pulse until finely chopped. Heat a large skillet over medium heat. Add oil to pan; swirl to coat. Add mustard seeds and cumin; cook 10 seconds or until mustard seeds begin to pop. Add onion and curry powder; cook 10 min, stirring frequently. Hot and Sour Soup with Tofu

(White pepper gives the soup mild heat; for more spice, stir in sambal oelek.)
1 (14 oz) package firm water-packed tofu, drained
1 3/4 cups water, divided
1 1/2 oz package dried sliced shiitake mushroom caps
4 cups fat-free, less-sodium chicken broth
1/4 cup white vinegar
2 Tbsp less-sodium soy sauce
1 Tbsp finely chopped peeled fresh ginger
2 tsp sugar
3/4 tsp white pepper
1 garlic clove, minced
2 1/2 Tbsp cornstarch
1/2 cup canned sliced bamboo shoots, drained and cut into julienne strips
1 large egg, lightly beaten

Stir cornstarch mixture, tofu, and bamboo shoots into broth mixture; bring to a boil. Cook 1 min, stirring occasionally; remove from heat. Slowly drizzle egg into broth mixture (do not stir). Place pan over low heat; cook 1 minute. Stir soup gently to combine. Sprinkle with green onions.

Citrus Tilapia
4 tilapia fillets
Cooking spray
1/2 cup fresh orange juice (about 1 orange)
3 Tbsp fresh lime juice
1 Tbsp brown sugar
1 Tbsp extra-virgin olive oil

Summer Squash Croquettes
4 2/3 cups coarsely chopped yellow squash (about 1 1/4 lbs)
1/2 cup chopped green oinions
1 cup crushed saltine crackers (about 30)

1. Steam squash and 1/2 cup onions, covered, 15 min or until tender. Drain well. Mash mixture with a fork. Stir in crackers and next 3 ingredients (through eggs). Cover and chill for 3 hours; drain well in a fine mesh strainer.
2. Place cornmeal in a shallow dish. Divide squash mixture into 12 equal portions, shaping each portion into a 1/2 inch thick patty. Lightly coat each patty with cooking spray.
3. Heat 1 tsp canola oil in a large nonstick skillet coated with cooking spray over medium-high heat. Place 4 patties in pan; cook 1 1/2 min on each side or until golden. Remove patties from pan. Repeat procedure twice with remaining oil and patties. Garnish with onions if desired. Serve immediately.

Check your beans 10-15 minutes ahead of time to make sure they'r enot drying out.
1 pound dried navy beans (about 2 1/2 cups)
3 applewood-smoked bacon slices
1 cup finely finely chopped onion
5 cups water, divided
1/2 cup maple syrup, divided
1/4 cup plus 2 Tbsp bourbon, divided
1/4 cup Dijon mustard
1 1/2 tsp Worcestershire sauce
1/4 tsp freshly ground black pepper
1 Tbsp cider vinegar
1 tsp salt
1. Sort and wash beans; place in a large Dutch oven. Cover with water to 2 in above beans; cover and let stand 8 hours or overnight. Drain beans. Wipe pan dry with paper towel.
2. Preheat oven to 350.
3. Heat pan over medium-high heat. Add bacon to pan, and cook for 4 minutes or until crisp. Remove from pan, reserving 1 1/2 Tbsp drippings in pan; crumble bacon. Add onion to drippings in pan; cook for 5 min or until onion begins to brown, stirring frequently. Add beans, bacon, 4 cups water, 1/4 cup maple syrup, 1/4 cup bourbon, and next 3 ingredients (through pepper) to pan. Bring to a boil; cover and bake at 350 for 2 hours.
4. Stir in remaining 1 cup water, remaining 1/4 cup maple syrup, and remaining 2 Tbsp bourbon. Cover and bake 1 hour or until beans are tender and liquid is almost absorbed. Stir in vinegar and salt.

Risotto Primavera

3 1/4 cups water
2 1/4 cups fat-free, less-sodium chicken broth
1 1/2 cups chopped onion
1 1/2 cups Arborio rice
2 Tbsp white wine vinegar
1/2 cup frozen green peas
12 oz asparagus, trimmed and cut into 1-inch pieces
2 oz pecorino Romano cheese, divided
1 tbsp lemon juice
1/4 tsp black pepper
1. Preheat oven to 400.
2. Toss 1 1/2 tsp olive oil, 1/8 tsp salt, and tomatoes on a parchment lined jelly-roll pan. Bake at 400 for 15 min or until tomatoes burst.
3. Heat 3 1/4 cups water and broth in a saucepan over medium heat (do not boil).
4. Heat remaining 1 1/2 tsp oil in a large Dutch oven over medium-high heat. Add onion to pan; cook 5 min, stirring frequently. Add rice; cook 1 min. Stir in vinegar; cook 30 seconds or until the liquid is absorbed, stirring constantly. Add broth mixture, 1/2 cup at a time, stirring constantly until each portion is absorbed before adding the next (about 20 minutes total). Add peas and asparagus to pan with last 1/2 cup of broth mixture. Remove from heat; grate 1 oz cheese. Stir in grated cheese, remaining 3/8 tsp salt, and juice. Spoon about 1 3/4 cups risotto into each of 4 bowls; top evenly with tomatoes. Shave remaining cheese evenly over each serving; sprinkle with pepper.

Ruby Port and Rhubarb Risotto with Sugared Strawberries
Cooking Light.
2 cups sliced strawberries
3/4 cup plus 1 Tbsp sugar, divided
2/3 cup ruby port
1 1/2 cups chopped rhubarb
3 1/2 cups water, divided
2 cups whole milk
1/4 tsp salt
1/8 tsp freshly ground nutmeg
2 Tbsp butter
1 cup uncooked Arborio rice other medium-grain rice
1/2 tsp vanilla extract
1/4 cup (2 oz) mascarpone cheese
1. Combine strawberries and 1 Tbsp sugar in small bowl. Set aside.
2. Combine port and 1/4 cup sugar in a small saucepan over medium-high heat. Bring to a boil; cook 7 min or until slightly thickened. Stir in rhubarb; cook 7 min.
3. Bring 3 1/2 cups water to a simmer in a small aucepan (do not boil). Keep warm over low heat. Combine milk, remaining 1/2 cup sugar, salt, and nutmeg in a separate saucepan; bring to a simmer (do not boil). Keep warm over low heat. Melt butter in a large Dutch oven. Add rice to pan; cook 1 min, stirring constantly. Stir in 1 cup hot water; cook 3 min or until liquid is nearly absorbed, stirring constantly. Add remaining water, 1/2 cup at a time, stirring constantly until each portion of water is absorbed before adding the next. Add milk mixture, 1/2 cup at a time, stirring constantly until each portion of milk is absorbed before adding the next (about 30 min total). Stir in vanilla; cook 1 min. Remove from heat; stir in mascarpone until cheese melts. Place about 1/2 cup risotto in each of 8 bowls and top with 2 Tbsp port mixture and 1/4 cup strawberry mixture.

1 cup chopped shallots
1 Tbsp extra-virgin olive oil
1 tsp chopped fresh thyme
4 garlic cloves, minced
4 oz cremini mushrooms, sliced
4 oz shiitake mushrooms, stemmed and sliced
4 oz oyster mushrooms, sliced
1 cup uncooked Arborio rice or other medium-grain rice
1/3 cup Madeira wine or dry sherry
4 cups baby spinach
1/2 cup (2 oz) grated fresh Asiago cheese
1/2 tsp salt
1/4 tsp freshly ground black pepper
1. Bring chicken stock to a simmer in a small saucepan (do not boil); keep warm over low heat.
2. Heat a large dutch oven over medium heat. Add bacon to pan; cook 8 min or until crisp, stirring occasionally. Remove bacon from pan with a slotted spoon. Add shallots, oil, thyme, and garlic to drippings in pan; cook 6 min or until shallots are tender, stirring occasionally. Stir in mushrooms; cook 8 min, stirring occasionally. Potato Leek Soup
Ingredients
- 1 large or 2 small leeks, about 1 pound
- 2 tablespoons butter
- 2 strips bacon, chopped
- 1/2 cup dry white wine
- 5 cups chicken stock
- 2 bay leaves
- 1/2 tsp. ground black pepper
- 1/2 tsp. white pepper
- 1 1/2 tsp. salt
- 2 tsp. fresh thyme
- 1 to 1 1/4 pounds russet potatoes, diced
- 1/2 to 3/4 cup creme fraiche or heavy cream
- 2 tablespoons snipped chives
Preparation
- Trim the green portions of the leek, halve the white part of the leek lengthwise and rinse well under cold running water to rid the leek of any sand. Slice thinly crosswise and set aside.
- In a large soup pot over medium heat, melt the butter and add the bacon. Cook for 5 to 6 minutes, stirring occasionally, until the bacon is very soft and has rendered most of its fat.
- Add the chopped leeks and cook until wilted, about 5 minutes.
- Add the wine and bring to a boil.
- Add the black pepper, thyme, chicken stock, potatoes, salt and white pepper, and bring to a boil. Reduce the heat to a simmer and cook for 30 minutes, or until the potatoes are falling apart and the soup is very flavorful.
- Puree the soup in a food processor or with an immersion blender directly in the pot.
- Stir in the creme fraiche/heavy creme and adjust the seasoning, if necessary.
- Serve immediately, with some of the snipped chives sprinkled over the top of each bowl of soup.
